Help w/dried out roast

My client's son made us dinner Sunday evening...a lovely roast which was way over-cooked and dried out in my opinion. Now, I have a ton of leftovers to use up. Any suggestions about using leftover standing rib roast or reviving a dried out roast would be appreciated.
