Someone here brought up the umami taste.  I was never sure I'd actually tasted it and knew what I was tasting, but I sure did at Christmas dinner.

DD had purchased ready to cook stuffed baby portobellos and they were incredible, EARTHY.  An earthy flavor I'd never had before.  I checked and some mushrooms really pack in the umami.  It was wonderful.

Some people just aren't foodies.  I remember someone asked Johnny Carson how he stayed so slender.  He said it was because he didn't care about food, he never had.
