Oh yes, breakfast tacos are good. My daughter makes a potato soft taco but I can't remember what else is in it.

I forgot about breakfast tacos. We mostly have these for dinner though, especially if I have left over roasted potatoes.
I saute some poblano peppers and onions with the potatoes. I'll hand a bit of chihauhau cheese just to get it slightly stringy. I serve that with an over easy egg and flour torillas. It's a hearty taco and very tasty.

carnitas or machaca, diced white onion and cilantro
chicken, verde sauce and a little sour cream
fish tacos, cabbage, crema and lime
al pastor, white onion, cilantro and lime
puffy tacos, lettuce and pico de gallo
guisado, onions and cilantro and salsa
I'll stop there.
This! Tacos are all different and served with different items. I also like fajita tacos with grilled onions and bell peppers, cheese, pico, sour cream, and guac. Or a good bacon, egg, and cheese breakfast taco - yum!
Austin and San Antonio have a breakfast taco rivalry over which city is the birthplace of the breakfast taco. Earlier this year, there was a Taco War that finally ended when the mayors held a Taco Summit. Breakfast tacos are a big deal in both cities.
Tacos are delicious!
I was raised in San Antonio, and my sister still lives there. You are so right about the tacos down there. I really love Mexican food, and live in St. Louis, MO area. Have fortunately found a family owned Mexican restaurant about a mile from where I live. Their food is more like the food you get in SA. My sister was here recently to help me out for a bit, and we went to this restaurant while she was here. She too liked their food. Their tacos are delicious, as are their chips and salsa......

I love fish tacos! They are definitely my favorite. Last year we tried duck tacos with a little hoisin - they are a close second.
