Here's something I thought you all might like during this hot weather.
Fluff
(A Weight Watcher's Recipe)
1 small can mandarin oranges in juice, drained
1 large can crushed pineapple in its own juice, undrained
1 small carton Light Cool Whip
6 ounces (1-1/2 individual cartons) Weight Watchers Vanilla Yogurt
1 small box fat-free sugar-free Instant Vanilla Pudding
(original recipe called for White Chocolate, but Vanilla is better)
Mix all. Can eat plain or pour into a large graham cracker crust.
This is the only "lite" recipe I've ever found so delicious I begged for the recipe when it was served. I've managed to overcome all of its good benefits by doubling the recipe, using regular versions of Cool Whip, Pudding, and Yogurt and adding 6 ounces of frozen coconut. I serve it in tall stemmed glasses, and it feels sinful even in its original version. Use as a dessert or a salad.
