I think it's a shame when someone dismisses WFPB eating (and boy did I do that, too!) without looking further into it beyond what someone posts as a typical day's food. You don't need to eat soy (I eat no soy) nor do you have to eat hot cereal.
There is a PLETHORA of whole foods, high in nutrients, fiber, and protein (yes, PROTEIN!) available to you.
I was afraid of the high carbohydrate requirement as I, like you, thought I'd "pack on the pounds". I started out at a healthy, normal weight (and I work out a lot - weight training and dance primarily) and wasn't interested in this diet for weight loss or weight gain. What has happened, though, is that I am 8 pounds lighter than I was when I began this diet 3 months ago. I eat a LOT of food and I am never hungry. My cravings for empty, processed foods have all but disappeared. I get plenty of protein and fats without eating either from animal sources or processed oils.
A typical day for me:
Breakfast - steel cut oatmeal with ground flaxseed, a banana, blueberries, a few walnuts and unsweetened almond milk.
* on early morning workout days I have a smoothie before hitting the gym - a banana, 1/2 cup berries, 1/4 avocato, tbspn ground flaxseed, a large handful of baby spinach, and maybe some peaches or half an apple and celery - whatever fruit and vegs I have on hand that I like in a smoothie. Before a workout I need fuel that I can digest quickly.
Lunch - a large salad with romaine, carrots, celery, beets, apple, sunflower seeds, snow peas, green beans - again, whatever vegetables I have on hand that I'd like to toss in with it. Almost always add an apple because I LOVE an apple in a green salad. A piece of Dave's Good Seed Organic Bread or Ezekiel, with peanut butter and a little grape jelly. Or I'll put hummus on the bread, or maybe almond butter. I might have 2 slices if I've had a particularly strenuous workout or if I'm just still hungry. I use a dressing of balsamic vinegar, Trader Joe's Orange Champagne vinegar, stone ground Dijon mustard, and honey. No oil.
Dinner - Usually a large plate of potatoes (sweet, purple, fingerling, whatever!) which I might just boil or cut in strips and make baked "fries" (no oil!). Along with those I will have broccoli, red cabbage, red bell peppers, onions, peas, corn, carrots, squash - whatever veggies I have that I just put in a steamer. So easy. I squeeze a lemon over the veggies and love ketchup on potatoes so I use a no sugar, low salt organic variety. I just use a tablespoon or so for the entire "mess" of potatoes.
OR
A lentil stew made with veggie broth, carrots, onions, celery, tomatoes with a side of broccoli
OR
Brown rice, black beans and corn with any number of different salsas. Also, with a side of broccoli (my favorite green vegetable probably) or brussels sprouts, or whatever greens I might have.
Lately I've had a crush on organic red grapes and have them most nights for dessert.
The key is eating enough food, as sidsmom points out - you can eat a much larger volume of food with these types of foods as they have less than half the amount of calories per gram than fat does.
I know that you said you are no longer interested, but I decided to respond anyway.
Because I'm like that. And because I wanted to say that I am eating A LOT and have actually lost weight. My jeans are looser in the waist and I don't mind.

Currently I like a dressing made with balsamic vinegar, stone ground Dijon mustard, honey, and Trader Joe's Orange Champagne Vinegar. I can't really tell you amounts as I just kind of eyeball it (the balsamic being the largest part) and tasting and adjusting.

Can I just say your post was NOT totally unnecessary. While I haven't adopted a WFPB diet, I am very interested in how it works. Any menu suggestions help me understand how to incorporate in my lifestyle. For instance, I have not eaten a white potato in forever, but I couldn't understand how it could be edible without a slathering of butter and sour cream.
So I really do appreciate the time you take to educate those of us who are afraid of carbohydrates! I am happy that you seem to have easily adapted to your new eating lifestyle. Keep up the good work!

Thank you for saying so! I really am high on this way of eating/living as I am truly seeing the benefits and enjoy learning more about it and how it benefits me, other WFPB eaters, the animals, and the planet.
I just had a late lunch a little while ago, the lentil soup that I made on Sunday for the week. What has happened with it is that every day I have added leftovers from other meals and it has morphed from a pretty good soup to a really outstanding stew! I've added to the original lentils, onions, carrots, celery, tomatoes, veggie broth - since then I've added some black beans, corn, rice and peas. Today's lunch was the best! And I have one more lunch left for tomorrow. ![]()
Unrelated to the taste of the food, I was at the doctor today as I thought I was coming down with bronchitis (something that has happened to me the last few years at this time of the year, right after doing a lot of leaf raking - not to get too much into that, but that's what happens, and I wanted to get a jump on it before it progressed, which it has, in the past) and I had the requisite blood pressure taken. I was a little concerned what it might be, as I have struggled with a rising BP over the past several years. I thought, uh oh, I wonder what it is today after having very little sleep and a lot of coughing and sinus stuff since the Big Raking on Sunday. WELL, my BP was totally normal. I was thrilled. And what have I changed? MY DIET!!! (I am not on any meds)
