@SouthernBee

Sausage:

Make a bean-based sausage. It’s all about the spice.

Many, many ‘main dishes’ can be made with beans/rice/lentils.

@Misplaced Parisian: Wow! Thank you. Just checked Olive Tomato and signed up for emails. Love the shopping list and very excited. I have always roasted eggplant and a variety of squash in olive oil, plus DH likes this and looking forward to more vegetable  sheet pan meals to make it easier on me. Southern Bee

@SouthernBee   Squeals of glee!  You are very welcome.  I'm delighted you found the website helpful!  That was my hope.  Thanks for letting me know.  Sheet pan meals rock!  Happy Cooking.

Re: Mediterranean Diet need quick and easy recipes

@Misplaced Parisian : I’M still making list for future shopping. Worn out from grocery shopping this morning and still need to put can goods up. Purchased extra can tomatoes and a variety of frozen vegetables. Also purchased fresh collards, eggplant, variety of squash, carrots and onions. Forgot sweet potatoes. No meat purchased because I have chicken and fish in the freezer. DH last year started small garden area with what he likes- plums and muscadines. DH just stated he ordered two cherry trees. This will get him outside and doing something.Small changes for positive results. Southern Bee

Sometimes it is all about choices. If DH isn't ready for changes no matter what you do he will not be happy.

@SouthernBee  You and your DH are doing great!  Your purchases make me hungry!  Take care of yourself too, sweetie.  Don't forget you.  And the cherry trees....those are beautiful and yummy.  You are spot on...small changes for positive results...that's the way to do it.  All those smalle changes add up over time.  Kudos to both of you.

Re: Mediterranean Diet need quick and easy recipes

@Misplaced Parisian : Thank you. DH agreed to evening snacks  to replace chips and cookies: celery stuffed with pimento cheese, small salads like  pear salad, ambrosia, and or muffins. I’m willing to offer this to move forward for better options. No purchases made today for chips, cookies or candy- I was trying to avoid tempting areas. In the last two months only made 1/2 gallon of sweet tea instead of every week- this was my weakness, trying to drink more water. We have never consumed a lot of soft drinks but now prefer ginger ale and cranberry juice. DH agreed to  purchase oatmeal instead of his favorite cereals loaded with sugar. Southern Bee

@SouthernBee  Whoa!  You both are doing fantastic.  Wow.  Keep up the great work.  I love Perrier with a splash of cranberry juice.  Sweet tea, I've never had that.  I grew up with sun tea and when I say this my southern friends (Louisiana) cringe.  Smiles.

Ginger ale which is really soda pop has a lot of sugar and so does most fruit juices.
