Being diabetic I shouldn't eat bread however I have found a low carb bread at Sprouts that is really nice and doesn't knock my blood sugar out of whack.

I love bread and will continue eating it. I don't eat a lot because it makes me feel too full. But a fresh bread roll with butter, I cannot resist.

Of course bread is not bad for you. Good grief, humans have been eating grains and breads of thousands upon thousands of years. It's a staple in many cultures. Remember "bread" can be made from a whole host of grains, not just wheat. Not that there's anything wrong with eating wheat for 99% of us. Why are listening to what some clerk in a grocery store says anyway?

Terrier,I have the dry container for the Vitamix and mill my own flour all the time: it is indeed money well spent. You will never want store bought again....and there is no end to the types of flour you can make.

The Vitamix containers are expensive,and from time to time, I worry about "what if"-because I really love my fresh flour. One of the things I would strongly consider if anything ever happened to my Vitamix and it was beyond repair-is a grain mill from Lehman's. I have few Ninja appliances that could replace the Vitamix, but I do not think they could mill flour.

I haven't read all the posts, so maybe someone has brought this up already, but has anyone ever made bread with coconut flour? I bought some organic coconut flour without knowing what I would use it for. Coconut bread sounds a little tasty. Smile I'll have to do some digging and see if I can find a recipe for it.

I,too, have coconut flour. I searched for some recipes recently and some looked okay but they all seemed to use baking powder, not yeast. And were said to be cornbread-like. There was one that had height and looked like a nicer texture. I think it takes a lot less coconut flour than normally used.

My DH and I watch what we eat & exercise 5-6 days a wk, but we also love to cook & I love to bake!! We made spaghetti last night & I baked copycat Olive Garden breadsticks & an apple and raspberry cobbler. I also made the Olive Garden dressing & salad , so good. Smiley Happy
