Yea, I found fresh organic blueberries at Sam's and organic strawberries at Costco.  Guess what I'm having for dinner!.

Yes, weren't they yummy.  I was surprised to find that green bell peppers are unripe red peppers.  The taste is sweeter and if you decide to go with red, Costco carries a bag of 2 yellow, orange, and red at a good price.  I also buy them at Trader Joe's.  Thanks for the post.


@phoenixbrd I did not know that green peppers are unripe red peppers!  I don't have a Costco or TJ around where I live, darn it.  I have been lurking since this thread's inception, finding motivation.  😊

@phoenixbrd Glad you liked your quinoa peppers. They are delicious and satisfying. I found out green peppers turn to red peppers when I left green peppers in the garden too long and I noticed them turning red. What a great mistake. 

 

This morning I was at BJ’s and bought organic blueberries, organic mixed berries and organic tropical fruit blend. I always have these in our freezer. 

 

Green smoothie

salad with some mixed berries, homemade dressing, apple

going out for dinner. I will be armed with my salad dressing. I already looked at the menu online and it looks like some kind of pasta.

Yesterday I asked the chef to make pasta and steamed veggies for me. It was good. He used fresh tomatoes so it wasn’t dry. 

 

Greens and fruit smoothie

rest of the day just grazed on raw veggies and some fruit

            fresh blueberries/strawberries

            shredded iceberg with pinto beans, black beans, corn and salsa verde

Good Morning @SandPiper....I've been reflecting on this process..  Early in the new year, DH and I did a 40 day juice fast.  Both of us have maintained our weight loss. 

 

For the month of June, I'm going to do a green juice and one raw plant based meal.   I don't want to stop autophagy and healing, so I'll incorporate IF.  Green Juice planned around 12:00 and one raw meal late in the afternoon.  This will leave plenty of time for autophagy to occur.  This should be a fun journey and I'm starting today! 

 

Today:

 

green juice - pineapple, spinach, celery, cucumber, ginger, two limes  24 oz

 

meal:  large salad, Braggs w/balsamic

 

We are on our way for a workout,  DH wants to stop at his favorite restaurant afterwards for his one plant based meal.  I've got my juice in my gym bag, so that is what I'm having at the restaurant.  I know this way of life seems strange to some, but I've been doing this for a lot of years.  So I'm really comfortable with the process.  

 

Looks like it is just the two of us have stayed the course since January. I've enjoyed the few people who have joined us and especially appreciate getting to know John, @hckynut.   We have just a couple of days and I'll post until Friday just to complete the process.  Thanks so much for your support and consistency throughout this journey.  RESPECT.

@phoenixbrd I am no where near the point you are at and I don't really have my DH with me completely. I struggle day to day. I'll know it is a lifestyle for me when I don't have to think so hard and knowing what foods to eat and how to eat them comes naturally. Thanks so much for your support and inspiration. I cannot tell you how much you have helped me get this far.

 

I too will post until June 1st at which time I will check in as planned.

@SandPiper  You are doing great!  The loaf sounds yummy....making those substantial dishes for DH is one of the strategies I used to help my husband transition to a plant based diet.
