anyone have a good recipe for yellow cake made from scratch.

This is my old-favorite, stand-by recipe from my Mom's files:

 

1 cup softened butter

1 3/4 cups sugar

2 tsp vanilla

3 eggs

2 egg yolks

2 1/4 cups cake flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup milk

1/2 cup sour cream

 

Whisk milk and sour cream in measuring cup.  Whip butter with electric mixer until fluffy, beat in sugar for 5 minutes.  Mix in vanilla.  Mix in eggs and yolks one at a time.  

 

Sift flour, baking powder and soda, and salt together in bowl.  Mix in 1/3 flour mixture to butter/egg mixture.  Mix in 1/2 milk/sour cream mixture.  Mix in another 1/3 of flour, then beat in rest of milk/sour cream.  Mix in rest of flour.

 

Grease 2 round cake pans, and line with parchment rounds.  Grease parchment and sides of pans (I use cooking spray).  Flour pans.

 

Evenly divide batter between pans and bake for 25 minutes in 350 degree oven until lightly golden.  Cool for 10 minutes before removing from pans to cooling rack.

thank you deepwaterdotter. i saw parchment 9 inch cake rounds in joblot a couple years ago and i love them. cake allways comes right out.
