I want to thank you so much for this recipe. My DD has to eat gluten free and it's so hard to fix things at holiday time. I know she loves banana bread and this is going to be a big surprise for her,

 

I do have one question that you may be able to answer for me. I make meatballs for Christmas Eve and my recipe calls for cracker crumbs, which she can't eat. Do you have any suggestion? TIA

@Leeny, have you tried making meatballs with cooked rice? That's what I've used in stuffed peppers.

There are many good gluten free recipes available on Pinterest. As for the cracker crumbs, 4-C makes gluten free bread crumbs, both seasoned and unseasoned. I use them all the time.

No, I haven't tried cooked rice for these meatballs. I have used rice in meatballs when I make porcupine  meatballs though.

We tried this brand of gluten free crackers and they are pretty good.  They are made with rice flour and corn meal.  It should act like a substitute in the meatballs.  Our local Walmart carries it so it should be easy to find.  You might have to pulse it a few times in a blender.

 

Good Thins Simply Salt Rice Snacks Gluten Free Crackers, 3.5 oz
