what do you do wit te bones of yor turkey?  i put them in my pressure cooker and cook them.  this reemoves all the meat from the bones and then i have some extra turkey meat to give to my dogs. plus the broth to flvaor their food.  the bones are then really soft and clean, so i add them to my compost pile for bonemeal.

I make turkey stock:

 

1 turkey carcass cut into 5 pieces

1 peeled and halved onion

1 peeled and chopped carrot

3 unpeeled and smashed garlic cloves

4 oz chopped celery

2 cups white wine

1 bay leaf

5 sprigs parsley

3 sprigs thyme

 

Bring carcass parts, onion, carrot, celery, wine, bay leaf, and 4 1/2 qts water to boil in large stockpot (mine holds 12 quarts).  Simmer on low heat for 2 hours, skimming fat/foam off surface.  Add parsley and thyme.  Simmer 2 more hours, skimming as necessary.

 

Strain into large container, picking out edible pieces of meat.  Cool stock for 20 minutes and spoon fat from surface.  Cool to room temperature, cover, and refrigerate or freeze.  I freeze in 1-qt freezer containers.

@shortbreadlover  My hematologist told me the second cooking of the bones produces the most marrow for good health and to use that for root soup.  I have profoundly serious anemia and receive infusions of blood and/or iron, and he has recommended that plus chicken and beef liver for my iron stores.

So many questions I would have for the doc.

First one, ‘show me a reputable study’ all the while

looking at him/her like,

I have cooked the turkey bones and have made broth, but no one likes turnkey broth or turkey soup, so now I just throw the bones out.

 

my family prefers chicken over turkey any day.

@sidsmom   I am not a fool.  This is a very well-educated, well-informed young doctor with many journal articles written on hematology and oncology.

Probably thinks Paleo/Keto is good...both very bone brothy.

So sad to see doctors perpetuate this myth.

@shortbreadlover Ditto @deepwaterdotter except I don't use wine (it's gone by now Smiley Sad, and I saute my veggies first. Also, the herbs depend on what is left in the pots on my patio. My favorite leftover soup is turkey tortelllini soup, but DH likes turkey corn soup.
