1/4 c sour chream

 

2 t whole milk

 

2 to 3 t ranchseasoning mix

 

1/4 c melted butter

 

1/3 c grated parm cheese

 

 

1/4 t chilli powder

 

mix sour cream, milk and ranch mix together, set aside.  mix butter, parm and seasonings together.  cook cook as desired or even grill.  top with cream mixture and then dip in cheese mixture

@shortbreadlover   Thank you for this recipe--you had me with the ranch ingredient.  Love that seasoning!

 

The Mexican Corn Recipe #1 also sounds good.

I make a slightly spicier version of this recipe:

 

3 cups frozen corn

1 tbsp butter

1 tbsp vegetable oil

1/4 cup mayonnaise

1/4 cup sour cream

2 tbsp lime juice

1 tsp chili powder

1 tsp kosher salt

1/4 tsp ground cumin

1/8 tsp paprika (I use smoked)

1/4 cup crumbled feta cheese

 

Heat butter and oil in skillet.  Cook corn in single layer for 2 minutes.  Cook 2 more minutes, stirring until golden and sizzling.  

 

Whisk mayo, sour cream, lime juice, chili powder, salt, cumin, paprika, and some freshly-ground pepper together in serving bowl.  Stir in corn.  Sprinkle feta on top.
