loaded mashed potato casserole

5 1/2 cups mashed potatoes

8 oz pkg cream cheese ( softened )

8 oz container sour cream

2 tsp. parsley flakes

1 tsp. garlic salt

3/4 cup shredded cheddar cheese

6 slices bacon crisply cooked and crumbled

Combines all ingredients except cheese and bacon. Beat until smooth. Spoon into a 13"x9" baking dish, top with cheese. Cover and bake at 350 for 30 min. Uncover and top with the crumbled bacon and bake for another 10 min.

When I make mashed potatoes for dinner I always make extra, when dinner is over I mix this up with the extra potatoes put in a freezer safe dish and have it ready on lazy days to just take out and bake. I do not freeze it with the cheese or bacon. This can easily be cut in 1/2 and baked in pie dishes to.
