key lime pie - uh, sort of.....

JUDGE ALEX’S “KEY LIME” PIE
Ingredients:

1 graham cracker pie crust
4 egg yolks
2 cans sweetened condensed milk
8 oz. reconstituted lemon juice
Reddi-Wip

Instructions:
Preheat oven to 325°F.
Beat together egg yolks, condensed milk, and lemon juice. Once mixed well, pour mixture into pie shell.
Place pie in heated oven, then turn off the heat right away. 25 minutes later, pull it out of the oven and chill in the fridge. Once it has cooled down, top with Redd-Wip.

i saw this and it looks simple.  has anyone tried this recipe?  i guess the tartness of the lemon juice tricks the palate into thinking it's key lime.  we rarely see key limes here in California.

Sounds like traditional sweetened condensed milk cookery (delicious!) but why call "lemon" pie "key lime" pie OR, WHY NOT use key lime juice?

Well, there's a difference between lemon and lime, so this version will taste like lemon. If I wanted Lome pie, I guess I would use lime juice instead of lemon juice.  Maybe start with less than the amount called for, then taste to see if it's lime-y enough.  BTW, regular limes can be used in place of key limes.

 

I wonder why the Judge used lemon juice juice?

key limes taste different from limes -  i haven't seen bottled key lime juice but see that you can Prime it in from Amazon.  of course fresh juice is always better, i am sure.

 All of our grocery stores sell key lime juice in a bottle, on the canned fruit aisle, not refrigerated.

You never know how strong you are until being strong is the only choice you have.

It is similar to my No bake cheesecake and Key Lime Pie that I use.  I just switch out lemon juice and lime juice for the two recipe and all other ingredients are the same.

One graham cracker crust

One 8 oz. cream cheese

One can Sweetened Condensed Milk

One teaspoon of vanilla; and

1/3 cup of whatever juice you need for your preference of cheesecake.

Beat cheese and milk add juice and vanilla at the end and refrigerate a few hours.  No eggs no baking.

I use fruit for cheesecake and usually plain with lime.

Love cool whip but redding whip is just tastes strange to me.  I through out and entire Butterscotch Pie that called for Redding Whip.  Never bought it again.

Key lime juice is sold bottled in grocery stores. One cup should substitute fine. 

 

Alternatively, try Emeril's recipe. It's the best one I've tried and key lime pie is my favorite.

Nellie And Joe's Key West Lime Juice, 16Oz Plastic  Can be found in the bottled juice aisle of almost any grocery store.  

Strive for respect instead of attention. It lasts longer.
