I make homemade salsa, and was wondering how long it would keep in the frig? I don't cook anything, just use the food processor. It does have vinegar in it for flavor/preservative. Any ideas?  Thanks!

Best Answer:  a day or two if it's uncooked. after that, the vegetables will begin to break down due to the enzymes released during chopping. the avocado will start to brown and not taste as good.

cooked salsa (i don't recommend adding avocado to this type) will keep for several days or even 2 weeks in the fridge in a tightly sealed container. if you can it under heat using glass jars and metal lids, you can store it in the pantry for 2 years.
