I can't make a red sauce to SAVE MY SOUL----I buy mine---so sad---however, my brother grows tremedous amounts of toms every year and my SIL, just make them into stewed toms, and freezes it. She then uses that in her soups, stews and sauces. Nothing more than water, toms, salt/sugar and a few herbs-----

Fresh basil is used in marinara sauce. It's in season now.

With fresh garden tomatoes it's best to seed the tomatoes and cook the tomato pulp for no less than an hour before you add spices and simmer into a marinara sauce.
Tomatoes are generally so acidic I add about 2 teaspoons of sugar to relieve that bite in spaghetti sauce. My family has to have onions in every type of red sauce we eat.

If you double the amount of tomatoes, that should counterbalance the excessive sugar taste. Adding some wine and simmering down should also help.
And I wouldn't use tarragon in a tomato sauce. Oregano, rosemary and garlic are what I typically use. And for a too acidic sauce I add some grated raw carrot, or a little white zinfandel, or some other drinkable table wine, or a pinch of sugar.
Hope this helps. And, as you know, you can freeze sauce if you wind up having to double the sauce to straighten out the excessive sweetness to salvage your hard work.

@deb5555 et al, I forgot that I also use basil, fresh if I have it, or dried in my sauce. I went back and edited my original post to include it.
Glad you made it and like it. It doesn't take too much effort once you assemble it and let it simmer slowly on the stovetop.
