is anyone having a cookout this upcoming holiday?if so,what are you putting on the grill and what will your sides be.happy 4th!

It'll just be the two of us, unless something comes together last minute.  Our meals are very simple these days.  I'm planning to grill some thick boneless pork loin chops and will likely serve with roasted cauliflower and a small basic tossed salad.

DH is smoking another beef brisket...

The last time was on Memorial Day weekend.

 

The sides...none actually...just a double serving of brisket...LOL

For dessert, a small bowl each of freshly picked & chilled strawberries with home-made keto whipped cream.

Beverage...we'll each have a couple of Corona Extra for our 'carb' treat while watching the neighborhood fireworks Smiley Very Happy

@Luvsmyfam  We're having my MIL and StepFIL. They are 94 and 90. They can eat like nobody's business! DH wants to have burgers and dogs, but I'd like to add a few ribeyes. There is local fresh corn available, so that's a must. I think I'll do a potato salad instead of parsley potatoes because it's going to be kind of hot. I might make steamed clams, but the in-laws don't really like them. Probably fresh blueberry cobbler for dessert. I don't have a recipe, but will try to find one.

@PA Mom-mom consider whether you need to cut corn off cobb for your inlaws.  i had not realized parent with dentures would not be able to enjoy corn on the cobb.  love fresh corn.

@mizree Up until now, they have been able to typewriter the corn with the best of them. They are both farm raised. Actually, I don't think either of them have dentures. But, thanks for the heads-up. I'll have a sharp knife at the ready.

I love the 4th of July and feel this year is special.  Just my family is coming but it is a big bunch so I am making with the help of my DH...

 

Grilled crusted pork tenderloin.  The crust is formed with salt, pepper, brown sugar, sweet paprika, cumin, garlic powder, onion powder and a pinch of red pepper flakes.  This is so good and a family favorite.  It doesn't hurt that the tenderloin was on sale for $2.99 a pound, LOL!

Roasted potatoes

Corn on the cob...mexican style

Grilled veggies

Lemon sherbert jello mold

Foccia bread

For dessert:

Strawberry shortcake but I serve it with pound cake...In Garten's recipe is excellent!

Apple slab cake

 

I am baking today with my 2 DAL which should be alot of fun. As I said we love the 4th. Afterwards we will go see the fireworks.  It's be quite awhile since we all have been together.

@Silverfox1, What a great menu! I hope you have a great time with your family. When you get a chance after the festivities I would like your crust for the tenderloin recipe.
