i can cheddar cheese soup

 

1/2 can (soup can) cream

 

1/2 can chicken broth

 

1/2 c chopped ham

 

1/2 c shredded cheese(your choice, but i like cheddar )

 

mix all together and heat until cheese is melted.  you can add broc.  if desired

I like a combination of cheddar and Swiss:

 

3 1/2 cups chicken broth

1/2 cup diced onion

1 tsp salt

1/2 tsp pepper

5 cups chopped broccoli

4 cups milk

1/2 cup flour

3 cups grated cheddar cheese

1 cup grated Swiss cheese

4 cups cubed cooked ham

 

Bring chicken broth, onion, salt, and pepper to simmer in larger saucepan.  Add broccoli, cover, and cook until vegetables are tender (8-9 minutes).  

 

Mix milk and flour in blender until smooth.  Slowly add milk mixture into soup and stir well.  Gently simmer, stirring constantly, until thickened (3-4 minutes).

 

Stir in cheeses a handful at a time over low heat, letting melt before adding next handful.  Stir in ham.

sounds good to me.

 

i use the canned soup as a base and then just add the ham cheese and broccoli.  i find this makes a very small amount so i do not have a lot of leftovers

@deepwaterdotter  I've saved your recipe and look forward to preparing it when  cooler weather arrives.  I like that your recipe is easy and does not use any canned soups.  Thank you for posting it.
