can anyone help lots of cukes and tomato

have garden for the first time its so fun lol

any canning recipies for my tons of tomato and cucumbers woud be great

and first time canning any help i would love

ty so excited my garden is so much fun but wow tons of veggies

Sounds wonderful --- you can send me some! It's been a long time since I had a good garden, and it sounds like you hit the jackpot for your first time having one. I don't know anything about canning, but if you run out of pickles, just cut up some cukes in the remaining pickle juice. You can do that for weeks, and it makes the best pickles -- in just one or two days, really crisp, great tasting pickles!{#emotions_dlg.laugh}

when i have leftover tomatoes OR when i have tomatoes that are getting soft, i usually just make my own tomato paste out of them. just cook them down slowlyn on low heat. i usually have a bit of butter or olive oil, salt, and pepper added.....sometimes some garlic. i then use a stick blender to make it smoother and put it into small lock and lock containers and freeze for use in recipes like stews, soups, casseroles, and spaghetti sauce.

Follow recipe exactly as written.

Refrigerator Pickles

7 cups cucumbers
2 tsp. salt
1 onion, chopped or sliced thinly into rings

Pare cukes and slice thin.(1/8")
Put all of above ingredients in non-reactive large bowl; cover with ice water.
Put in refrigerator overnight.
In the morning, pour off the water but do not rinse.
Add: 1 cup cold white vinegar, 2 cups white granulated sugar, 1 tsp. celery seed. Mix well. Can add green food coloring, if desired.
Will keep in refrigerator for weeks.

Just looking at the OP's post my mouth is watering at the thought of cucumbers, tomatoes and a little vinegar. Cut up the onions (very thin) and mix in.

Italian Fresh Frozen Tomato Sauce

1 tbsp. butter
1/2 cup chopped onion
1 clove garlic, finely minced
2 cups chopped fresh tomatoes (Italian preferred)
2 sprigs fresh thyme or 1/2 tsp. dried
1 bay leaf
Salt and freshly ground black pepper, to taste

Heat butter in saucepan. Cook onion and garlic until onion is translucent.
Add remaining ingredients and cook, stirring occasionally, about 15 minutes. (Cook uncovered to have a thicker sauce).
Remove bay leaf. Cool and freeze.
(Leave 1" space unless using freezer jars).
Yield: about 2-1/2 cups.
