@Hoovermom I think the key is to cook them with a cookie rack placed on your baking sheet. Air circulates and they aren't sitting in the bacon grease.

have never seen this recipe with parmesan! i will have to try it. we always make them with brown sugar. NEVER any leftovers......i have only made them right before serving.
i have noted that if you are using a thicker bacon it is better to cook the bacon a bit before using it in the recipe.

I"m so sorry @Hoovermom-I'm just now seeing this. The only recipe I have used in making these is Paula Deen's. I use thin sliced bacon and have never had a problem getting these crisp. The bacon is done but it might not be real crispy as it would just fixing bacon by itself. I have never had "flaccid" bacon. I do believe I put these on a baking rack which would help keep the appetizer from cooking in the grease and also help air circulation to cook the underside. I also fix the lil smokies wrapped in bacon that I tossed with brown sugar and a hint of cayenne as above with excellent results. I have not fixed the recipe you mentioned about the bacon wrapped around the piece of chicken and have the same concern as you-these two pieces of meat cook at different times. I never seem to be able to grill or bake jalapeno poppers so that the bacon gets done before the cheese stuffing oozes out either.

Preheat the oven to 250 °F.
Place 1 teaspoon of the cheese on each cracker and wrap tightly with a strip of bacon. Place the wrapped crack
tightly with a strip of bacon. Place the wrapped crackers on a broiler rack on a baking sheet and put the baking sheets on the oven rack. Bake for 2 hours, or until the bacon is done. Do not turn. Drain on paper towels. Serve hot or at room temp. Makes about 24 bacon crisps.
Cook’s note: You can also bake at 350 °F for 40 minutes if in a hurry!

@Hoovermom....@grandma2pkmh is correct....when I made them I did not have any trouble with the bacon getting crisp on the bottom...because of using a rack, and it helps the grease drain off. You could always turn them over if you want to make sure of even crispiness. Now I am hungry for this appetizer!

I just stumbled across another variation of this recipe. Nothing hard but will require a little more work but look totally holiday like.

@mustang66lady...that sounds good - my dh loves that hot pepper jelly. I buy a container at christmas....it's good on cracker with cream cheese

Thanks. I have not made this recipe but it looks interesting. We all love spicy/hot so I think these may be a hit at our home but maybe not all homes. Hope you have a great holiday season!
