Zucchini Recipes

Onion Zucchini Saute

1 sweet onion cut into wedges

2 Tablespoons oil

2 cups sliced zucchini

1 Tablespoon water

1/2 teaspoon basil

1 teaspoon (or to taste) salt

pepper to taste

2 tomatoes cut into 1/4 inch wedges

Peel onion and cut into 1 inch wedges. Heat oil in skillet. Add all remaining EXCEPT tomatoes. Saute for a few minutes. Cover and simmer for 10 minutes, or till onion and zucchini are tender. Add tomatoes and cook for a few minutes longer to heat tomatoes.

Cheese Zucchini Crisps

1/2 cup corn flake crumbs

2 Tablespoons Parmesan cheese

1/2 teaspoon seasoned salt

dash of garlic powder

4 small UNpeeled zucchinis...cut into 1/2 inch strips

1/4 cup melted butter

Combine corn flakes, cheese and seasonings. Put in a plastic zip lock bag. Dip zucchini strips in melted butter. Put the strips into the zip lock bag. Shake to coat. Place the strips in a baking sheet. Bake at 375* for about 10 minutes.

Zucchini Casserole

1 1/2 pounds Ground Beef..chopped

1 cup chopped celery

1 can Tomato soup

1 cup UNcooked rice

1 medium zucchini

seasonings of your choice

1 cup grated cheese of your choice

1 can stewed tomatoes

Cut zucchini into chunks and place in the bottom of a buttered casserole dish. Salt slightly. Combine beef, pepper, onion, celery,tomato soup and rice. Mix together using your hands. (LOL I always used those disposabe gloves when mixing any meat mixture).

Spread mixture over the top of the zucchini. Top with tomatoes. Sprinkle the grated cheese over the top and cover with foil. Bake 1 hour at 350*.

If anyone is looking for zucchini recipes and get Penzey's catalog there are a couple of recipes in the one I just received that look good.

quims..hi It is nice to meet you! Welcome to RS! I am so sorry...The zucchinni casserole uses 1 green bell pepper chopped, and 3/4 of an onion diced small. I hope you get the chance to try this..If so, please let me know! Smile

1 can corn drained,or fresh off the cob

1 small onion

2-3 small zucchini

1 stick butter (can use less) S&P

Melt butter ,add the rest of ing.

Simmer ,low, until squash is tender.
