Last night we had zucchini parmesan sandwiches, or in my case, no cheese. Very simple and delightfully light, though fried, of course.
Two large zucchini sliced thin, lengthwise.
flour seasoned with salt and pepper
egg and milk (egg substitute and soy milk works well, too)
mozzarella cheese (optional)
wide French or Italian bread
Marinara sauce
Dredge the zucchini in flour, soak in the egg/milk mixture and fry in very hot oil until golden brown. Drain on paper towels. Arrange zucchini strips on on side of the Italian bread, I take out some of the doughy part of the bread but you don't have to. Spread desired amount of marinara sauce over the zucchini. Add mozzarella cheese if desired. Place on a cookie sheet into the oven at 400 degrees for about 15 minutes. Assemble sandwiches and YUMMY
