This is a cake that my friend/co-worker brought to our work potluck on Friday.

I didn't get a chance to ask for the recipe, but she somehow knew I'd be asking for this one..haha. It's not tried/true by ME, but it is a wonderful recipe! I'm usually not too fond of Lemon desserts (I know...I'm strange that way!), but this was was great! Since Easter is on Sunday, I wanted to post this before I make it to give others the chance!

Lemon Cake

Mix together 1 small box Lemon Instant Pudding Mix and 1 box Lemon Cake Mix, and prepare per cake mix directions. Pour batter into 13 x 9-inch baking dish sprayed with cooking spray. After baking as directed, remove from oven. While still warm, pour lemon juice and powdered sugar mixture over warm cake.

For Topping, mix together:

1 cup lemon juice

2 cups powdered sugar


For Optional Frosting (in place of topping), whip together:

1 cup lemon juice

2 cups powdered sugar

1/2 cup cream cheese, softened

1 Tbsp butter, softened

*Add a little milk to thin, as desired.
