This may have been posted before, but this is my recipe, it is quick, easy and very tasty.
Zucchini Bread
Makes 2 loaves.
Pre-heat oven to 350 degrees.
Grease 2 loaf pans (I spray with Pam)
3 well beaten eggs, mix well with;
2 cups sugar
1 cup vegetable oil
3 teaspoons vanilla
2 cups grated zucchini (I use 2 small zucchini and use peel & all)
Sift together and stir in;
3 cups flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons cinnamon
1/2 cup pecan pieces (optional)
Mix well...bake at 350 degrees for 1 hour, approx.
Cool in pans, will turn out easily once cooled.

I picked up a package of 3 @ my local grocery store, used 1 with some other vegetables I roasted, and needed to use the other 2, so I made bread. Made me think about posting my recipe here. Didn't mean to post something out of season. Sorry.
