It is getting to be that time of the year when we start getting zucchini from our gardens. I post this every year around this time. It is a big hit at our house.

ZUCCHINI BAKE

3 cups thinly sliced zucchini

1 cup Bisquick

½ cup chopped onion

½ cup grated Parmesan cheese

2 tablespoons chopped parsley

½ teaspoon salt

1 clove garlic, chopped

½ cup salad oil

4 eggs, beaten

Mix together in a large bowl. Pour into a 13X9 inch pan. Bake at 350 for about ½ hour or until lightly browned on top.
