Zippy Iced Lemon Cookies

Cookie:

2 1/2 cups AP flour

1 cup white sugar

1/2 cup brown sugar (packed)

2 eggs

1 tblsp. freshly grated lemon peel

2 tblsp. fresh lemon juice

1/4 tsp. lemon extract

1 1/2 tsp. cream of tartar

1 tsp. baking soda

1/4 tsp. salt

Glaze:

2 1/2 cups powdered sugar

1/4 cup plus 2 tblsp. of fresh lemon juice

Directions:

Preheat oven to 400. Combine all cookie ingredients in a large bowl and beat at low speed for about 3 minutes until well incorporated. Drop dough by rounded teaspoons on ungreased cookie sheets. Bake 8-10 minutes or until edges brown slightly.

In the meantime, combine glaze ingredients in small bowl until smooth and creamy. Ice cookies while still slightly warm. Garnish w/additional fresh lemon peel, if desired.
