ZUCCHINI BARS

CRUMB MIXTURE:

3 cups flour

1 cup butter

1 cup brown sugar

3/4 teaspoon salt

1 teaspoon baking powder

Combine ingredients. Save 1/2 cup for thickening and 1 cup for topping. Pat remaining mixture into 9 x 13 inch pan. Bake at 350 degrees for 10 minutes.

ZUCCHINI MIXTURE:

2 very large zucchini (or 4 medium). Peel, seed and cut into chunks.

2/3 cup lemon juice

Cook above until tender. (About 25 to 30 minutes)

THEN ADD:

2 cups sugar

1/2 teaspoon nutmeg

2 teaspoons c innamon

Simmer 3 more minutesd and thicken with 1/2 cup Crumb Mixture. Cool

Pour cooled mixture over crust. Sprinkle 1 cup of Crumb Mixture on top and bake an additional 30 minutes at 350 degrees.

Let cool and cut into squares.
