I love this recipe and always make waffles in Belgian Waffle Maker...and then freeze 1/4 sections and take out as needed - portion control.

1 C Kashi Go Lean Crunch , crushed

1/2 C White Whole Wheat Flour

1/4 C rolled oats

1/2 tsp baking soda

1/4 tsp pumpkin spice

3/4 C buttermilk [you can substitute almond milk with lemon juice]

1 TB grapeseed oil

1 TB pure maple syrup

2 TB pineapple juice [you can substitute apple juice, white grape juice, pear juice]

1 large egg

Using my Ninja blender:

Crush the cereal slightly

Add flour, oats, baking soda, pumpkin spice and blend together

Add buttermilk, oil, syrup, egg and blend together

Refrigerate for 1 hour or over night

Add mixture to waffle pan and Voila! You don't even have to add syrup. But I like to top with peanut butter and/or a little maple syrup

Optional: You can add crushed pineapple, blueberries etc to mixture also.

A little different taste from regular vanilla waffles but yummy! Enjoy!
