I make this all the time. It is light, low-cal and delicious, and perfect to have during the hot summer months.
YOGURT PIE
1 large (2 extra servings size) ready made graham cracker crust
5 5.3 - 6 oz. containers of yogurt, any flavor (I prefer the Dannon Oikos Greek yogurt)
1 8 oz. container of Cool Whip
fruit, nuts, coconut
Gently fold together the yogurt and Cool Whip with additions of your choice, for example, sliced fruit (peaches, mangoes, bananas), berries, coconut, sliced toasted almonds, chocolate chips - use your imagination! Put the mixture in the graham crust and refrigerate or freeze. If you put the pie in the refrigerator, it's like a chiffon-y texture. If you put it in the freezer, it's more like an ice cream pie. But I recommend that if you put it in the freezer, remove it about 5 minutes before serving to make it easier to slice. You can then garnish each slice with additional whip cream or fruit or nuts.......
I recently made pineapple orange coconut yogurt pie, strawberry banana yogurt pie, black cherry yogurt pie with toasted almonds, cherries and a drizzle of chocolate! Yum!
