I made this cake today to go with strawberries and whipped cream. It is moist and buttery.

Yellow Cake

2 3/4 cups flour (I like unbleached)
2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
(softened to room temperature)
1 3/4 cup sugar
1 1/2 teaspoons vanilla
2 eggs
(room temperature)
1 1/4 cup milk

Preheat oven to 375. Grease and lightly flour 2- 8 or 9 inch round cake pans...or a 9 x 13 pan. In a bowl, combine flour, baking powder and salt, set aside.
I use a whisk to make sure I get it well blended. Beat butter well; add sugar and vanilla and beat well. I use a KA stand mixer. Add eggs, one at a time, beating well for 1 minute after each. Add dry ingredients and milk alternately to beaten mixture, beating well after each addition. I start and end with flour mixture. Turn into prepared pans. Bake for 30 to 35 minutes or till tests done. Cool 10 minutes on wire racks. Remove from pans. I just leave in the 9 x 13 pan. Cool. (It takes 30 minutes for a 9 x 13 pan in my oven.)
