Do you put the tomatoes in boiling water first in order to peel them? Also what kind of tomato works best?

This recipe looks good. I'm used to Tomato Pie (pie crust) with more tomatoes and less cheese - usually just shredded cheddar. And only Hellman's mayo - never, ever (gasp) Miracle Whip! LOL!

At Christmas I do a Tomato Pie in a deep dish Pet Ritz crust with thin pieces of Gruyere cheese to the top and drained Italian canned tomatoes, basil and oregano. Heaven!
