I don't remember where I got this recipe but I intend to try it. I don't care much for dark chocolate but I do enjoy some white chocolate occasionally. I think it would be good with a little salt on the popcorn or with salted nuts.

White Chocolate Popcorn

1/3 cup unpopped popcorn
12 oz. pkg. white chocolate chips
2 tbsp. vegetable oil, if needed
2 crushed candy canes, nuts, M&M's, etc. (optional)

Set out a large cookie sheet with sides, sprayed with non-stick butter flavor cooking spray.
Pop the corn, using an air popper, or no oil. Place in a large bowl.
Melt the white chocolate chips in the microwave; start with 30 seconds, then stir and do 15 seconds more and then another 15 seconds, if needed. Even when melted, the white chips will sometimes keep their shape so make sure to stir to check, otherwise you may burn it. If the chocolate seems too thick to pour, add 1-2 tbsp. of vegetable oil until the consistancy is pourable.
If you are adding anything like nuts or candies, add to the popcorn in the bowl now. Pour the white chocolate over the popcorn, mixing as you pour. A large fork works better than a spoon so you don't pick up so much of the chocolate and you can separate the kernels of popcorn.
Mix quickly! then spread in an even layer on the cookie sheet as it will harden quickly.
Once the chocolate has hardened, break it up and put in a holiday container for gifts of in a serving bowl for snacking.
It will get soggy if left exposed to the air, so keep it sealed in an air-tight container until you are ready to use it.
Sealed properly, it will keep for several weeks.
