Just took the pans out of the oven.

 

1.  Salmon loaf made with canned salmon, seasoned with lemon juice, lemon pepper, salt - breadcrumbs and eggs (I don't measure).  Enough leftovers for Friday and Saturday.  (I generally only eat twice a day.)

 

2.  Big pan of roasted vegetables.  Also - enough for leftovers.  Beets, eggplant, white potatoes, sweet potatoes and eggplant.   I'll probably add some spinach on Saturday.

 

I've been reading about roasted kale ... defnitely somethingI want to try.

Grilled scallops, sautéed veggies and roasted red potatoes.

Mixed greens salad for me, with cucumber and onion, and either cottage cheese or chicken breast, and Penzey's Italian dressing made with plain yogurt, white vinegar, and a bit of their roasted peppercorn mix, too.  I love it.

 

DH will have either pasta and red sauce or a rib eye and rice with peas and carrots.  I'll see what I feel like making.  I really need to cook the steak.  I think that'll be it.

@ALRATIBA: Sounds delicious! I never thought of making a salmon loaf. Whenever I use canned salmon, I always make salmon croquettes. I'll have to give salmon loaf a try. 

 

In answer to your question, I had a baked chicken breast  with roasted zucchini, yellow squash, onions, garlic in pasta sauce over rice.

My DH had to drive to NYC today and is not back yet. It's getting late. I have vegan  red beans and rice simmering.  Will serve with grilled pork chops and red beet salad.

I thawed out some leftover chili and had it with some brown rice and a green salad with vinaigrette.

Cioppino and French bread. My dh makes a big batch every winter and we put in containers and freeze this is the last one😞
