I am preparing today one of my my Greek recipes and it's called:

Lemon Chicken with Poatatoes, I am sharing the meal just in case you'll make it. It is easy and tasty, trust you me:

 

4 pounds chicken tighs

1 tablespoon salt

1 tablespoon oregano (dry is fine)

1 teasponn rosemary

1 teaspoon black pepper 

1/2 cup fresh lemon juice

olive oil (about 1/2 cup)

6 glovesminced garlic

3 potatoes quarted and peeled

 

*One Knorr or Maggie desolved in a cup of water

 

 

Do place the chicken in a bowl. Season with the salt, oregano, pepper, and rosemary. Add the fresh lemon juice, olive oil, and garlic. Add the potatoes in bowl now with the chicken;,stir all together until chicken and potatoes are evenly coated with marinade you made.

 

Transfer now the chicken and poatoes to a roasting pan and poor on top of them all the marinade.

 

Place the roasting pan now in a preeated oven 425 degrees of Fereheit for 20 minutes. 

Toss the potatoes and chicken and try to keep the chicken skin side up. Continue baking for 25 minutes more until you see the chicken is browned. Add if you see the meal is dry the * spiced water (Knorr or Maggie)

 

That's it, and we say in Greek, KALI OREKSI  (bon appetit)

Just leftover chicken curry salad on rye and a salad. We're keeping it simple tonight.

Tonight we had our stand-by "neither of us wants to cook" meal. Peel & eat cold shrimp with homemade cocktail sauce which we freeze in small containers.

 

We've been eating a TON of this the last few months.

My son is dropping off a Thai dinner, Panang curry with tofu!  The (red) curry is so delicious with the tofu, it absorbs the flavor.  I miss our dinners together, but we're trying very hard to be as safe as we can.  I pray so many others would.
