What if I Told You This Recipe

I doubt any of you remember me from 25 years ago when I was on the recipe and Diamonique forums.  I collected recipes and made e-recipe cards, with a lot of the recipes I found coming from the Q.  On my e-cards, I would always indicate where I found the recipe.  

 

I haven't cooked much in recent years and all my e-(recipe) cards are on my old computer.  Fast forward to a few days ago when I found a TWO ingredient recipe for Pineapple Angel Food Cake.  Two ingredients?  I can do that!  I bought enough to make two cakes.  If the first one turned out, I'm going to make one for the babies that moved in the area recently.  There are at least 2, maybe 3 of them.  Here is the card and below I will notate what went wrong.

The original IG reel I saw for this recipe, made it in a tube pan.  The other recipes I saw called for cooking it in a 9x12 glass baking dish.  I will do that next time.  I cooked this for 40 minutes. It was dark brown on top and not fully cooked on the inside. Fine with me but doesn't make for a good presentation and some people might not like a half baked cake...go figure!

 

I used tidbits like the original IG reel I saw.  I will do the same again.  Others have used crushed.  Do NOT use heavy syrup.  This cake is very sweet (but light) with natural juice.  A fully cooked cake won't be as sweet.  When it says let cool (upside down) for TWO hours, they don't really mean an hour and 15 minutes.  It would have released better if I had waited the full 2 hours and hadn't  (purposely) slammed the inflated cake on the counter, making it a third of it's original height. Did I mention I haven't cooked in a few years? Smiley Surprised  Soooooo good!

What do you mean by light? There is lot of sugar in it,but sounds delicious.

This was a Weight Watchers recipe I found years ago. I forgot how many points it has but it's not many unless you eat the whole cake it's that delicious. It's sooooo good. I make it in a 9x13 or so pan and just cut pieces from the pan.

But, what about the sugar? I think years ago WW didn't do much w/sugar,just calories.

1 slice of AF cake has 20 grams of sugar. 2 slices of PA has 10 grams of sugar.

Not sure what you are not understanding about the original post that you keep questioning. She said it's light but has a lot of sugar. Light usually refers to lack of fat and density. 

 

If you are concerned with sugar, stay away from cake in general.ots not for you.

Don't see anything about sugar,just that it is light, and sweet. But,thank you. And I will stay away from this cake. But,it sure sounds yummy.

I remember. You set up a website that we could visit. All the recipes were displayed on beautifully decorated cards. I used quite a few.

Yes, @tiny 2, yes I did!  I finally had to take everything off that site (pbase) because they changed it to a subscription-based site and Google was free.  Now Google is limiting their unlimited photo storage. I've been sorting thru and deleting a lot of photos plus put a copy on Amazon.  Thanks for remembering Smiley Happy
