What Can I Take To a Forth of July Party

We're going to a party and taking the motorcycle. It has bags for storage so I have room to take something, but not too big.

We go to this party every year. The hostess never has too much for appetizers (she usually has cheese and cracker and dip and chips) so I think an appetizer is what I would like to bring.

Any easy suggestions/recipes that would make the trip on the bike?

Ham Rollups, recipe from Taste of Home:

Ingredients
  • 1 package (8 ounces) cream cheese, softened
  • 1 can (4-1/4 ounces) chopped ripe olives, drained
  • 1/3 cup thinly sliced green onions

  • 8 to 10 thin slices fully cooked ham

  1. In a large bowl, beat cream cheese until smooth; stir in the olives and onions. Spread over ham slices. Roll up, jelly-roll style, starting with a short side. Chill for at least 1 hour. Just before serving, cut into 1-in. pieces. Yield: 40 appetizers. Edited to clean up the format.

What about a fruit salad. Cut up all the fruit and put it in a zip lock back. Bring along a bowl to put it in when you get there or borrow one of theirs. Have fun.

Salad On A Stick. I took these to a Memorial Day picnic and they were a big hit. Got the recipe here. Just do a quick search and you'll have it.

Edamame Hummus, Roasted Red Pepper Hummus and Pita Chips

Hummus is very easy to make with a food processor, or you could start with store bought and mix in the other ingredients. Spinach is good too. For pita chips, cut pita bread like a pie into triangles, brush with a little olive oil and slat. Bake at 350 until crisp any lightly toasted.

Cream cheese with pepper jelly. I love the mini pita crackers from Trader Joe's to serve it with.

Go forth on the Fourth with this incredibly easy, super delicious watermelon salad--only 4 ingredients: cubes of watermelon and fresh pineapple, sliced red onion and cilantro all tossed together. It goes with just about anything they might be serving, and is so refreshing!

Um.. THESE are crazy good!


*I sometimes substitute a pineapple cream cheese in these. Yum!
*I have made these with turkey bacon as well. Let's be honest... I prefer regular bacon lol
