Hi friends..Just thought I would start a thread to see what ideas we can come up with for ways to use left over turkey... Here Is one idea... Please add your ideas to this thread.
Turkey & Cabbage Salad
2/3 cup Miracle Whip
1 Tablespoon milk
2 teaspoons prepared mustard
1 1/2 teaspoons sugar
salt ...to taste
pepper...to taste
3 cups cubed cooked turkey
2 cups shredded cabbage
3/4 cup diced celery
1/2 cup sliced green onion
1 1/2 cups chow mein noodles
1/2 cup slivered almonds, toasted
2 Tablespoons sesame seeds, toasted
In a large bowl, combine the first six ingredients. Add the turkey, cabbage, celery and green onions; toss to combine. Cover and chill for several hours. Just before serving, add the chow mein noodles, almonds and sesame seeds. Toss to combine.
***NOTE*** When I make this I mix the chow mein noodles, toasted almonds and the sesame seeds together then I put them in a jar. The purpose of that is to sprinkle them on the salad as needed. Otherwise if you have leftover salad with the chow mein noodles, almonds and seeds in it, the next day the noodles are limp and have no crunch. It really does make a difference. Just wanted to share that

Our family has no problem with turkey leftovers. They want several more meals with stuffing, and sandwiches in between.

Turkey Shepherd's Pie
This is perfect for your after Thanksgiving leftovers. You can switch out the veggies and filling, etc. We have also baked this in the fireplace. I always add cheddar cheese to my Thanksgiving shopping list so I can make this dish after Thanksgiving.
Ingredients:
Leftover mashed potatoes
16 oz. bag of mixed veggies or leftover corn
1/4 cup diced onion or scallion or shallot
Leftover bread or oyster filling (who am I kidding - there will not be any leftover oyster filling.) (Note: if you don't have any leftover filling, you can substitute all mashed potatoes)
1 cup leftover turkey gravy or a packet of gravy mix and turkey juice or chicken broth
1 - 8 oz. package of shredded cheddar cheese or some other easily melting cheese.
2 or more cups diced turkey
Directions:
Sauté the veggies and onion in a little butter with some salt. Put the turkey in the bottom of a 2 quart buttered baking dish (I like the round or oval kind so you don't have to deal with corners). Sprinkle some of the gravy over the turkey. Next put in half of the veggies and sprinkle some of the gravy again. Now put the filling (if you still have some) and sprinkle more gravy. Then add the remainder of the veggies and sprinkle the rest of the gravy. Top the casserole with the mashed potatoes and then the shredded cheddar cheese. Bake at 350 degrees for 35 minutes and until the cheese is bubbly and the dish is heated through.

@LilBitMissty, I'm not a fan of leftover turkey, but if DH and I don't go anywhere for TG, I'll buy a turkey breast and will use your recipe for what is left over (probably make half the recipe). From the ingredients, it sounds delicious. I might add some halved green or red grapes to it. Thanks for the recipe!

Layered Turkey With Trimmings Casserole
3 cups cooked turkey ...shredded
1 1/2 cups cranberry sauce
4 cups mashed potatoes
2 cups corn
2 cups turkey gravy
1/3 cup milk
4 cups stuffing
1/4 cup chicken broth (or more for drizzling)
Preheat oven to 350*.
Combine turkey and cranberry sauce and spread evenly on the bottom of a 9x13 glass baking dish.
Evenly press on leftover mashed potatoes.
Sprinkle corn over the top.
Mix together milk and leftover gravy and spread evenly over potatoes and corn.
Sprinkle on leftover stuffing and lightly drizzle chicken broth over the top (this will keep the stuffing from drying out).
Cover with tin foil and bake at for appx. 30 to 40 minutes or until heated through.

Yum! I would prefer to eat your Layered Turkey with Trimmings Casserole instead of the initial offering of 'just baked from the oven' turkey. For me, it could be my one-pot plate Thanksgiving meal and have your Apple Lasagna recipe for dessert.🤗 I will definitely save this casserole to my recipe file.
It makes me happy when I see a post in this forum from you. I appreciate you sharing your knowedge and your mom's recipes!

I would use it like leftover grilled chicken in a stir fry with loads of fresh vegetables.
Be sure to add artichole hearts. They're a "super food"!
