I went to a BBQ where this was served and had to have the recipe. This is a great appetizer.
Waikiki Meatballs
1 ½ lb. ground beef
2/3 c. saltine cracker crumbs
1/3 c. minced onion
¼ c. milk
1 large egg slightly beaten
1 ½ t. salt
¼ t. ginger
1 T. vegetable oil
1 (15 oz.) can pineapple tidbits in juice
½ c. packed brown sugar
1/3 c. cider vinegar
2 T. corn starch
1 T. soy sauce
1/3 c, chopped bell pepper
1.Combine ground beef, saltine cracker crumbs, onion, milk, egg, salt and ginger in a large bowl. Mix well. Shape rounded tablespoons of mixture into balls.
2.Heat oil in a large skillet over medium heat. Add meatballs and cook through, turning frequently. Remove meatballs and set aside.
3.Drain pineapple reserving ¾ cup of juice. Combine reserved juice, brown sugar, vinegar, cornstarch and soy sauce in a small bowl. Mix well and pour into skillet.
4.Cook the juice mixture over medium heat stirring continually until thickened. Add back the meatballs, pineapple, and bell pepper.
5.Cook stirring occasionally until heated through about 10 minuites.
