Vitamix Soup Ideas

As promised, here are a couple of the recipes I use all the time in my Vitamix when I want something satisfying fast.  

 

I always bake extra potatoes in the oven and freeze them.  I then microwave them (pierced with a fork, of course) to use in these soups.  Hope this gets you kickstarted.

 

                  Potato and Spinach Soup  3 & 1/4 cups yield

 

2 cups vegetable or chicken broth

2 baked Russet potatoes, cut in half

1/4 cup chopped onion

1/2 Tsp dried Rosemary

3 Tbsp frozen spinach

1/2 to 1 Tsp salt--optional (I omit it entirely.)

 

Put all ingredients in the Vitamix container in the order listed above.

Select Variable 1 speed.

Switch machine to start and gradually increase speed to Variable 10.

Blend for 6 minutes or until heavy steam escapes from the vented lid.

Reduce speed to level 1 and blend for an additional 30 seconds.

 

                          Cream of Celery Soup    4 cups yield

 

2 Tbsp olive oil

2 or 3 peeled cloves of garlic

1/4 cup chopped onion

2 cups chopped celery

1/3 cup chopped parsnips

1/2 small baked Russet potato

1 &3/4 cups chicken broth

1/4 Tsp salt (I omit.)

pinch of black pepper (I use white pepper instead.)

1/4 cup heavy cream (Reserve to use at the end of the recipe.)

 

1.  In a small pan heat the olive oil and saute celery, parsnips, onion and garlic until the onion is tender.

 

2.  Place sauteed ingredients, potato, chicken broth, salt and pepper into the Vitamix container and secure lid.

 

3.  Switch machine to start and gradually increase speed to variable 10.

 

4.  Blend for 5 minutes or until heavy steam escapes from the vented lid.

 

5.  Reduce speed to variable 2 and remove the lid plug.

 

6.  Add heavy cream through the lid plug opening.

 

7.  Blend for an additional 10 seconds.

THANKS SO MUCH @aroc3435 !  They both sound really really good.  And we love our new one by the way!  LOVE it (except that liquid trys to ooze out around the top if it is very full, so might go back to our old tall jar).
