A delicious soup --- serve with a salad and a hot roll --- give yourself a treat!

Vegetarian Chowder

1 (1 lb.) pkg. dry lima beans
1-1/2 tsp. salt
1 cup chopped onion
1-1/2 cups chopped celery
1/4 cup butter
1/4 cup flour
1-1/2 tsp. salt
1/8 tsp. white pepper
1 tsp. sugar
3 cups milk
1 (1 lb.) can tomatoes, cut up
1 (1 lb.) can corn, drained
1 cup grated Cheddar or Monterey Jack cheese

Rinse and pick over beans. Soak beans in 6 cups water overnight; drain. In large kettle or Dutch oven, cook beans in 6 cups water and salt, covered, till tender (about 1 hr.). Saute onion and celery in butter in 2 qt. saucepan till tender. Blend in flour, salt, pepper, and sugar. Stir in milk; bring to a boil, stirring occasionally. Add remaining ingredients to beans; heat through.
Makes 12 (1-1/2 cup) servings.
