This is one of our family favorites (from Dom De Luise's cookbook). It's nice when you don't feel that 'need' for meat; you want to eat; you want sufficient, but you just want to be meatless on this occasion! A little parmesan or romano is good sprinkled on the top when serving.

Dom DeLuise's Vegetable Stew

4 T olive oil
4 garlic cloves, minced
2 onions, sliced
4 carrots, peeled and cut into 1-inch pcs
2 celery stalks, cut in 1/2-inch pcs
2 lge potatoes, peeled and cut into 1 1/2-inch pcs
18-oz can stewed tomatoes
28-oz cans crushed tomatoes
1 t oregano
8 leaves of fresh basil, coarsely chopped
10-12 mushrooms, quartered
pepper

In a large pan gently heat the oil, add the garlic and onions, and sauté for a few minutes, then add the carrots, celery, potatoes and peas. Add both kinds of tomatoes, pepper, oregano and basil, and simmer for 40 minutes, until the carrots are just tender.

Then add mushrooms and allow the stew to cook for 2 to 3 minutes more. Delicious with hot bread. Serves 6.
