Vegetable Meatball Soup
(recipe source: sweetandsavorybyshinee)
This is a light, quick and easy weeknight soup. Plus, it gives me reason to use my spiralizer and that's always fun.
2 medium carrots, diced
2 celery sticks, diced
1 medium potato, diced
2 tablespoons olive oil, divided
1lb meatballs, fresh or frozen (If frozen, no need to thaw)
2-3 garlic cloves, pressed
32oz low sodium chicken, beef or veggie broth
2 cups water
1 dried bay leaf
A few sprigs of thyme
1 teaspoon salt
½ teaspoon black pepper
2 small zucchinis (spiralized as noodles)
1 tablespoon chopped parsley
in a Dutch oven, heat 1 tablespoon of olive oil over medium high heat. Add the meatballs and brown on all sides. (It doesn't have to be completely cooked at this point.) Remove on to a plate.
In the same Dutch oven, heat the remaining 1 tablespoon of olive oil. Add garlic, carrots, potatoe and celery and sauté for 2 minutes, stirring occasionally.
Add broth, water, bay leaf, thyme, salt and pepper. Bring it to a boil. Reduce the heat to medium and simmer for 10-15 minutes, or until the vegetables are tender. Meanwhile, spiralize the zucchini into noodles.
Add meatballs and continue to cook until they are cooked through. Then add and zucchini and cook until zucchini is softened, no longer than 5 minute. Remove bay leaf and thyme sprigs. If desired, throw in some chopped parsley. Serve immediately.

This sounds wonderful! I love spiralizing too! Never thought to put them in soup which is a huge staple in my diet!

As soon as I can figure out where to store one...I want to upgrade to a better/bigger spiralizer! My hand held Veggetti is difficult for some items like Sweet Pots...and my hand is getting a little tired! LOL
We have an Italian market nearby that sells soup size mini meatballs! I buy them all the time since they are so convenient!

This is such an EASY recipe for soup. It goes together super quick. Plus, I like that you can truly make your own. I, too, think that I'm ready for a bigger spiralizer..lol
That little market by your house seems really convenient. I'd love to be able to have that convenience. Hope that you're doing well, my friend.

I make a lot of soup and freeze in individual serving size. Do you think the spiralized zucchini would freeze well without getting really mushy?
