I've had a recipe for a baked beans dish FOREVER!!!! Is easy and quick. It is called mandarin baked beans. Uses can beans and mandarin oranges with a few added ingredients---then is all cooked in the microwave--kind of a 1990s era recipe. Made it again for yesterdays xmas eve dinner with my fam--- was very good!!!

Served my Heavenly potatoes with Christmas Eve dinner . Peel & boil potatoes in water but remove before they are fully cooked ( al dente ) . Slice in slices lay in buttered casserole pan . Add fully cooked sauteed onions & one shallot . Layer potatoes, onion mixture then add a few dollops of sour cream . Then sprinkle with a very little amount of Parmesan cheese . Add salt & white pepper . Make a bechamel sauce adding a generous amount of Gruyere cheese . Pour bechamel sauce over each layer and mix to coat all the potatoes . Bake in oven till potatoes fully cooked.

Old recipes are the best! My 7th grade recipe box, a project for Home Economics, started with my family recipes, which at that point were already old.🗂️⏲️👩🍳
Now my grandchildren are cooking with th recipes.

My son has to work today. So lunch will be not be a big deal and nothing planned. I have Sam's Club BBQ Baked Beans with Brisket. So I will have that and add mandarin oranges.
I like both and figure I will give it a try.

Are baked beans the normal part of a Christmas dinner this is the second time I have seen them on the holiday table

I don't associate baked beans with Christmas, maybe New Year's and July 4th. I have never had baked beans on Christmas. But then a lot of people have macaroni and cheese on Christmas and I don't do that either.

@skatting44 --sounds heavenly!!! I would add ham to it--ultra fancy scalloped spuds with ham---all day long!!!
