From a vintage Southern Living Magazine Annual Recipe Book..........
FLOYD'S FAVORITE TOMATO SANDWICH--makes 8 sandwiches
1 large ripe tomato, peeled (such as beefsteak tomato)
1 large red or purple onion
3 tablespoons mayonnaise
1 tablespoon prepared mustard
16 sandwich bread slices
1/8 teaspoon salt
1/8 teaspoon pepper

Cut tomato and onion into 8 (1/4-inch) thick slices.
Layer in shallow dish
Cover and chill 8 hours
Discard onion
Stir together mayo and mustard, spread on 1 side of bread slices.
Place 1 tomato slice on each of 8 bread slices.
Sprinkle lighty with salt and pepper.
Top with remaining bread slices.
Cover and chill up to 2 days.

Recipe looks a little weird to me, but someday I'm going to try this.
Biggest challenge is finding a good-quality large beefsteak-type tomato these days.
Fondly remember the good tomatoes I used to eat as a kid.

Yuck!!! Take away the onion, mustard and mayonnaise and you have a good sandwich. Why bother making a tomato sandwich if you are going to sabotage the great taste of a homegrown tomato?

@novamc1, my father always had a huge vegetable garden. We always made tomato sandwiches with mayo and lots of pepper and refrigerated them before eating. The best! Thanks for the memory. LM

Part of the challenge, where I used to live until recently, was growing your own tomatoes without the groundhogs, squirrels and rabbits destroying the ripe tomatoes.
And we certainly can't count on the retail grocery stores to provide this rare item.

Nothing is better than thick slices of a ripe juicy tomato on toasted white bread with mayo, salt & pepper. I use to eat lots of tomatoes but can't anymore because my entire face flushes, feels hot & my cheeks turn beet red...not a good look. Darn, now I want that sandwich, spaghetti, baked ziti & lasagna too.

I like it! I have Purple Cherokee Beefsteaks this year- I will, of course, use the red onion elsewhere..not discard it..maybe chop and freeze for recipes...

Tomato sandwich=thick tomato slices on white toast with mayo and salt!!!!

@novamc1, fortunately for me, there are two local grocery chains in my area that buy homegrown fruits and vegetables from local farmers every summer....tomatoes, sweet corn, melons, peaches, peppers, etc. Good for their customers, good for the farmers and good for the stores!
