No mess egg salad sandwich:  Put mayo on a slice of bread, put egg slices on top, spread pickle relish on that.  Add thinly sliced onion if you like, sprinkle with herbs or lime salt is good.  Top with second slice.

I make custard pie, cinnamon raisin bread pudding, or egg nog when I have a lot of eggs left 🙂.  Lots of great possibilities with extra eggs!

@timeless  My daughter takes them to work or posts on FB and sells them. She also takes them to church and gives them away. Since they keep on the counter (unwashed) for a very long time, it isn't usually too much of problem. My son-in-law makes egg "muffins" with spinach , cheese and turkey bacon.They are great on the go.

I agree with donating them. There would never be too many eggs in this house. We all love eggs, especially me. Deviled, egg and olive for sandwiches, and my usual two for breakfast...I also have them in the fridge, hard-boiled, for my lazy "deviled"  eggs: cut in half, with a squirt of ketchup or different mustards lol. 



The pain they have cost us, the evils that never happened.

Scramble and freeze dry for all Spring glut.  Use them in baking, frying scrambled eggs, scrambling up for day old chicks.  Freeze drying retains 94% nutrients.  Once reconstituted with water, taste, smell and respond like fresh eggs.  Most folks would never notice.

For me, I use up grocery store eggs by making an omlette or quiche for dinner or hard boiled in the fridge for a protein snack.


 

My two dogs get 2-3 fresh eggs each morning.   Have been doing for years.

I often make frittatas for dinner, using whatever ihave inthe fridge, a few roast potatoes, vegies, even chicken, or shrimp, of course ham or bacon is yummy, and cheese if you want! Leftovers hold in the fridge for days- I bet it can be frozen once cooked.

@Skyegirl21  Thank you, Skyegirl21! I like to individially slice, wrap and freeze the leftover baked bread pudding so that I can have bread pudding whenever I want 🙂.

Feed them back to the chickens.  When my daughter gathers eggs and finds cracked or nasty covered shells, she breaks them in the lot for the chickens to eat.  The oldest eggs in the kitchen are also scrambled (shells and all), seasoned with cayenne or jalapeños, and fed to the chickens.
