Once again, this season, we have too many eggs.
What do you do with your excess?

most people around my area either sell them or give them away. there are a lot of local food groups that help feed those in need.

Hi timeless. I don't buy eggs very often because I only use them for baking. If you bake for the holidays maybe you could use your excess eggs for cookies, cakes or bread that freeze well. It may save you some time when the holidays arrive.

Some of my coworkers homestead or have working farms.
While they do sell to the public, one of the girls makes scrambled eggs to feed to her dogs. High in protein and rich in Omega 3, the dogs love them mixed in with their regular dog food.
For me, I use up grocery store eggs by making an omlette or quiche for dinner or hard boiled in the fridge for a protein snack.

@timeless - I take it you have chickens? That's so great!
As for having too many eggs for you to use, you can always donate them to a homeless shelter. Ours tries to make an elaborate brunch on the weekend and I know they welcome help with the ingredients for it. ![]()

Crack each into an ice cube tray and freeze, then store in a zip lock bag.

@Kachina624 I've heard tell that yolks don't thaw well in a frozen whole egg so I beat the eggs together before freezing. 1 large egg = about 3 tablespoons (add a bit to=2 oz ) I measure out that much beaten up eggs and freeze that.
I'd be sad if I couldn't separate yolk from whites in a thawed egg when I wanted it
Have You had good luck seperating whole thawed eggs?

I have silicone egg molds for 3 dozen eggs, they work well. Just used them a couple weeks ago, one of our stores had eggs on sale, 3 dozen for $1.99 so we bought them and froze them...they will be donated to our church come holiday cookie season.
