I had some leftover mashed potatoes, leftover collard greens as well. Mixed those together with an egg, flour and some cheddar. Yum.

That was creative and a good way to finish off the veggies without getting bored.

Thanks! It was good. I can only eat a few bites at a time so it will be dinner as well. The greens really added nice flavor.

Thank you! But it’s not because of illness. I had gastric bypass in 2006 and my stomach is literally the size of an egg. So I eat very small amounts at a time.

I rate your re-use of the leftovers A+!!!  Very anxious to do this the next time I get a carryout at the Wood Grill or Golden Corral. Smiley Wink

Why thank you! Remember to drain most of the liquid from the greens. I know it tastes soooo good. I mixed the drained liquid in the sour cream I put on top because bacon collard flavored sour cream, 😁
