Thanksgiving Leftovers Thread

[ Edited ]

Well the big day is over and you still have leftovers, especially turkey.  I thought I would start a thread with the email blast I received this morning and folks could add their ideas too:

My mother made a turkey rice soup that was to die for and I still make it now. Put the turkey bones in a soup pot and bring to a boil, then turn to simmer for about an hour. This is really important because the bones have a lot of flavor and it also helps to remove any leftover meat. Remove the bones and add rice (adjust the amount of rice to the amount of liquid) add leftover turkey meat and the secret ingredient is add leftover dressing. If you don't have any leftover get a box of Stove Top to substitute. The dressing is so important because it adds spices and flavor. Plus it will help thicken your soup. Cook until rice is done. You can add more liquid if you think it is too thick. My mother was a southern cook who didn't follow "a cup of this, a tsp. of that" it was always a handful of this and eyeball it so there is no "exact" anything. All I know is we always loved when she made it and my family now enjoys it. It's great on a cold afternoon or evening. Enjoy.

@momtochloe  Hello old friend!!  Hope you had a wonderful thanksgiving.  My favorite thing to do with leftovers is make a sandwich -- turkey, stuffing, cranberry sauce and mayo on a roll or bread.  Basic and, possibly, boring to some, but it is my all time favorite sandwich and I could eat one every day!

Thanks for sharing those ideas.  It was a fun read!  Plus it gave me the idea of adding cheese to my sandwich and heating it up!

Ree Drummond (Pioneer Woman) has a good panini sandwich that she made with left overs.  Sorry cant remember the name of that particular show.  I do remember it was made with mustard, cheese slice, turkey, cranberry sauce and something else.

Mmm Mmm - cannot wait to do dinner all over again tonight!!!  Our's was DE'LISH yesterday so I know it'll be as good tonight!

DH smoked the turkey breast on the grill w/apple chips marinating throughout the process. I fixed roasted carrots, made whole cran sauce w/a touch of allspice, trad dressing, of course mashed potatoes, turkey gravy.

DH also made a Martha dessert, similar to choc lava cakes, a beautiful ganache on top. He really knows his stuff!!!!

My favorite is After-Thanksgiving Turkey Soup from Taste of Home - a rich creamy turkey rice soup:

@Imaoldhippie I remember watching that show I think last week.  Wow did it look good and reminded me that my sandwiches never look like that!  I went searching for the recipe and found a nice link to that and other PW leftovers recipes:

Hiya @Citrine1 yes I did have a nice day and I hope the same for you and yours.  I made the mistake of breaking into a bag of chocolate drizzled popcorn from Aldi first thing in the morning so that pretty much tanked eating like an adult for the rest of the day but I just finished up the last of the turkey in a sandwich just now. Tomorrow my big Black Friday purchase is going to be $1.99 butter (woo-hoo!).  Enjoy the rest of your weekend my friend!  Smiley Happy
