Thanksgiving Leftovers Recipes

We usually have Thanksgiving leftovers that I use to make a casserole on Saturday. How do you use your leftovers?

 

I make a version of this casserole recipe with mozzarella instead of cheddar cheese.

Thanksgiving Leftover Casserole

 
Prep Time : minutes 
Cook Time : 25 minutes 
Total Time : 30 minutes 
Servings: 6 servings
 

Ingredients

  • 4 cups Stuffing, divided
  • 4 cups Turkey, about 1 pound
  • ¾ cup Mayonnaise, divided
  • ¼ cup Cranberry sauce
  • 2 cups Mashed potatoes, leftovers
  • 1 ½ cups Cheddar cheese, shredded

Instructions

  • Preheat oven to 375℉ and spray 8-inch baking dish with no-stick cooking spray.
  • Place half of the stuffing in the dish and top with all of the turkey.
  • In a small bowl, combine ¼ cup mayo and cranberry sauce. Evenly spread over turkey.
  • In another bowl, combine remaining ½ cup of mayo, potatoes and cheese; evenly spread on top of cranberry sauce mixture.
  • Top with remaining stuffing.
  • Bake for 25 minutes or until heated through.

Notes

 
  • Different Cheese: Use what you like or what you have. Sprinkle mozzarella cheese or any good melty cheese can be added to the turkey mixture.
  • Mayo Replacement: Cream of Mushroom soup or cream of chicken soup are wonderful to use in this recipe.
  • Season: If you need a little more, add salt, pepper, garlic powder to the casserole.
  • Moisture: If it still seems a little dry add, melted butter or chicken stock or turkey stock or top with leftover gravy.
  • Pasta: Add a little cooked pasta and top with sour cream for a different use for these thanksgiving leftovers.

I warm up turkey with cornbread dressing, make a sandwich with cranberry sauce on top. Sometimes it's without the bread.

Very simple.

My favorite leftover is to make a sandwich, I like Texas 

toast, heat the stuffing, add mayo, Turkey and top with cranberry sauce...Yum!!

Top of stove, large can Campbell's vegetable soup, reg size of  cream of chicken soup., cut up turkey all mixed together.  Put that over hot dinner rolls.  I have fallen in love with the Hawiian dinner rolls.  What wonderful flavor!!!

My favorite use of leftovers is just to have the same dinner with possibly a change of vegetables.

I take leftover butternut squash and add chicken broth till Iget the right consistency for soup .You can add spices to your taste, I like cumin and maybe a touch of chili powder. Yum.

Still like a turkey sandwich with gravy.  I always make lots of gravy for these.

My family typically eats sliced turkey, dressing and gravy until it's gone.  If I cook 2 large turkey breasts and have any leftover, I usually make turkey salad or a pot pie.  I only cook the few things we like so there's never a huge amount of food here.

We usually eat the turkey and filling along with gravy for breakfast, lunch and dinner. However, I have developed a Turkey Shepherd's Pie to use up the leftovers. Sometimes we actually bake it in the fireplace.

 

Ingredients:

Leftover mashed potatoes
16 oz. bag of mixed veggies or leftover corn
1/4 cup diced onion or scallion or shallot
Leftover carrots and celery – diced (optional)
Leftover bread or oyster filling (who am I kidding - there will not be any leftover oyster filling.)
(Note: if you don't have any leftover filling, you can substitute all mashed potatoes)
1 cup leftover turkey gravy or a packet of gravy mix and turkey juice or chicken broth
1 - 8 oz. package of shredded cheddar cheese or some other easily melting cheese.
2 or more cups diced turkey

 

Directions:

Sauté the veggies and onion in a little butter with some salt.  Put the turkey in the bottom of a 2 quart buttered baking dish (I like the round or oval kind so you don't have to deal with corners).  Sprinkle some of the gravy over the turkey.  Next put in half of the veggies and sprinkle some of the gravy again.  Now put the filling (if you still have some) and sprinkle more gravy.  Then add the remainder of the veggies and sprinkle the rest of the gravy.  Top the casserole with the mashed potatoes and then the shredded cheddar cheese.  Bake at 350 degrees for 35 minutes and until the cheese is bubbly and the dish is heated through.
