I've probably made this cake a couple dozen times as it was very popular in Texas.   I always made it in a 9 X 13" pan.   It's very rich and sweet,  almost to the point of gagging you. It's probably on the Internet in a thousand places.

This is not the one.  The recipe she used on Sunday used sour cream and applesauce....

In my opinion, the best recipe I've every used, and there have been plenty, was Pioneer Woman. Always gets compliments.

I had so much fun covering ITKWD yesterday for David Venable QVC. A lot of you asked about my recipe for "Not as Big as Texas Sheet Cake"….fewer fat and calories because of the smart swap of applesauce for oil and greek yogurt for sour cream. Here’s the recipe….enjoy!!

 

1 cup water
½ cup butter
⅓ cup unsweetened cocoa powder
2 eggs
¾ cup plain Greek yogurt
½ cup unsweetened applesauce
1 cup whole wheat flour
1 cup all purpose white flour
1-1/2 cups sugar
1 teaspoon baking soda
½ teaspoon salt

Chocolate Frosting:

½ cup butter
⅓ cup unsweetened cocoa powder
6 tablespoons milk
1 teaspoon vanilla extract
4 cups powdered sugar

Instructions:

1. Preheat oven to 350 degrees. Add the butter, water, and cocoa to a medium microwave safe bowl. Cook for about 2-2½ minutes whisking 30 seconds at a time until melted and smooth. Set aside.

2. In a medium sized bowl combine eggs, yogurt and applesauce and whisk until smooth. Set aside.

3. In a large mixing bowl, combine flour, sugar, baking soda, and salt. Whisk together. Add the warm chocolate mixture and stir to combine. Lastly add the yogurt mixture and stir again until combined. The batter may have a few lumps, but that is ok.

4. Pour into an ungreased jelly roll pan (13x18) or two 9x13 baking sheets and bake for 15-20 minutes until toothpick inserted in the center comes out clean.

5. To make the frosting: Melt the butter in a microwave safe bowl. Add cocoa and whisk until smooth. Whisk in milk and vanilla and lastly whisk in the powdered sugar. Pour over the cake while cake is still warm from oven and frost to the edges. Let the cake cool completely and allow the frosting to set.

In a previous post of mine on the subject, I was wrong when I stated she used sour cream....   Oh well, my memory is not what it used to be....

I made this and it was....well, no one wanted seconds and no one finished their first piece : (

 

Granted, the one I normally make is the Pioneer Womans' Texas Sheet cake. Think I'll stick to the one I usually use.

Hmmm. - did not really care for it myself. Think I will stick with my original recipe.

 

The original recipes for this cake are sweet - does not take much !! A small portion is all you need. Good with a cup of coffee or a glass of milk though. So, one cake will make many servings...good for a friend or family get together. No ice cream needed!! That would just be sugar overload!!
